Step into the heart of Central European home cooking with this comforting, flavor-rich class. Together, we’ll create a traditional meal featuring tender, buttery spaetzle and a soulful chicken paprikash simmered in a paprika-infused sauce.

You’ll learn how to make spaetzle from scratch—soft, pillowy dumplings that come together with a simple batter and a bit of technique. Then, we’ll build a classic chicken paprikash, layering sweet paprika, onions, and a creamy sauce to create a dish that is both rustic and deeply satisfying.

Along the way, we’ll explore the role of paprika for depth and warmth, techniques for achieving tender, flavorful chicken, how to create comforting, balanced dishes with simple ingredients, and tips for bringing old-world recipes into your modern kitchen.

Colleen is a mixed media artist, educator, and designer living and working in her new location in St. George, Utah (previously the East Bay of San Francisco). She approaches life the same way she paints, by embracing the mystery, staying open to change, finding courage, honoring her intuition and trusting the journey. This mindset has enabled her colorful, layered, contemporary, and distinctive style to emerge. Colleen has been told that she is the Mary Poppins of art supplies! She has a Master of Fine Art in Painting and relevant experience in teaching at Utah Tech University. She is also a trained chef with a life-long passion for the culinary arts.
